Objective: Nitrate is found in plants, particularly leafy green vegetables (LGVs), with lesser amounts added to processed meats. Dietary nitrate has been studied as a possible risk factor for stomach cancer, although recent research has examined its potential to lower blood pressure and improve exercise tolerance. It is unclear how familiar Registered Dietitian Nutritionists (RDNs) are with nitrate and how they interpret available research to develop nitrate-related beliefs and recommendations.
Methods: A survey was sent to RDNs to assess their beliefs regarding the health effects of dietary nitrate, their nitrate-related recommendations to clients, and their nitrate knowledge using a multiple choice quiz.
Results: The survey was completed by 211 RDNs. Average knowledge score was 3.70 (± 2.48) out of 12. The majority of RDNs believed dietary nitrate may influence certain health conditions (79.6%), including stomach cancer (59.2%), blood pressure (36.0%), exercise tolerance (28.9%), and headaches (25.1%). RDNs who believed dietary nitrate may impact BP and exercise tolerance scored higher on the knowledge quiz. Just over half, or 56.9% of RDNs frequently or occasionally recommend avoidance of foods due to nitrate, while 19.9% frequently or occasionally recommend consumption of foods due to nitrate. The majority of RDNs reported frequently recommending LGVs (89.6%) and never recommending processed meats (76%).
Conclusion: Our data support the fact that RDNs make nitrate related recommendations to clients. RDNs also appear to have various opinions regarding the health effects of dietary nitrate not necessarily based on factual data. Such opinions may be partly influenced by their nitrate knowledge.
